A great quick and fun meal for the whole family. Let the little ones help to assemble their own pizza’s to ensure the story about yesterday’s dinner stays magical.

Tramezzini Pizza Base:
3 loaves tramezzini bread
120 ml sun-dried tomato pesto
125 ml tomato Puree
100 g tomato paste
20 ml fresh chives
6 red onions
250 ml vegetable stock
50 g butter
60 ml brown sugar
150 ml water
350 g Eskort Mini Frikkadels
250 g mozzarella cheese
salt and pepper
Preheat the oven to 180֯C.
Add the frikkadels into an oven proof dish and drizzle with olive oil, bake in the oven for 15 minutes or until the frikkadels are golden.
Slice each tramezzini in half and layer them on a baking tray lined with parchment paper.
Mix the tomato puree, sun-dried tomato pesto and fresh chives and generously spread on each of the tramezzini bases.
Slice your onions in half and place them faced down in a frying pan with your vegetable stock, brown sugar and butter, add water to the pan so that the onions are covered, then close the pan with parchment paper to steam/cook. Cook the onions until the water has evaporated and the onions caramelized.
Slice mozzarella in thick slices and layer each pizza base with the mozzarella cheese, frikkadels, and caramelized onions and bake in oven until cheese melts and turns golden
Serve with fresh rocket, olive oil salt and pepper
